- Game species include all wild avian and terrestrial mammal species for which hunting is legally permitted in countries that have signed the Convention on the Conservation of European Wildlife and Natural Habitats (Bern, 1979). Game is usually defined as the live animal while game meat describes the product derived from the game carcasse (Codex).
